COELIAC RECIPES
Coeliac disease is an auto-immune disease that hinders
the small intestine from absorbing nutrients. Individuals suffering from coeliac disease must follow
a gluten-free diet. Gluten is a protein found in many grains including wheat, rye, and barley. It is
not difficult to find easy and delicious coeliac recipes.
A diagnosis of coeliac disease does not have to mean the end of delicious

recipes. Gluten is the ingredient that gives cakes their spring and provides bread with its elasticity.
Baked goods, therefore, will not have the exact characteristics as goods baked with standard baking flours.

flours.

Here are some coeliac recipes that are both delicious
and easy to prepare.
COELIAC RECIPES: GLUTEN-FREE COCONUT AND GINGER SLICE
Do not let the cup of sugar worry you. Since this recipe yields 24 bars, each
bar contains just a little more than one teaspoon of sugar. That is hardly worth mentioning.
Ingredients:
1 1/3 cups shredded
coconut 1 cup dehydrated or powdered coconut
1 cup superfine sugar
7 ounces dark chocolate
3 ounces slivered almonds
3 eggs 6 ounces of ginger in syrup (including syrup)
Directions:
Line an 11 x 27 oven-proof dish with aluminum foil. Either melt the chocolate
gently on stovetop or microwave on high for two minutes. Stir out any remaining lumps.
Spread the chocolate over the foil, going up the sides of the tin an inch or
so. (This will prevent the mixture from sticking to the foil.) Chill the chocolate coated pan in
refrigerator. Preheat oven to 350 degrees F.
Combine beaten eggs with remaining ingredients. Additional shredded coconut
may be added if lots of ginger syrup is used. Most people find that the recipe tastes even better when made
with extra syrup. Spread the mixture over the chocolate. Bake on middle rack of oven for 30 minutes. Turn
off the oven. Leave pan in oven an additional 30 minutes. Remove from oven and let cool. When cool, cut
into small pieces.
Here’s another delicious coeliac recipe. This dessert is simple to make and
is sure to be a hit.
COELIAC RECIPES: GLUTEN-FREE APRICOT FUDGE
Ingredients:
8 ounces butter
6 ounces brown sugar
2 cups dried
apricots, chopped 13 ounces condensed skim
milk
2 packets gluten-free rice cakes, crushed
Directions:
Slowly heat the sugar, butter, and condensed milk until mixture is smooth and
well blended. Add the dried apricots and crushed cakes. Mix well and spread in a sponge roll tin.
Refrigerate.
For a main dish, try this gluten-free chicken casserole. This recipe is
delicious when re-heated and freezes well. This dish goes well with rice and green vegetables.
COELIAC RECIPES: CHICKEN CASSEROLE
Ingredients:
3 pounds of chicken pieces (for best results, leave the skin
on)
4 teaspoons oil
2 large onions OR dried onion
4 teaspoons lemon juice
4 cloves garlic OR garlic
powder 2 teaspoons grated lemon rind 2 cups gluten-free
ketchup
2 teaspoons oil,
extra 2 teaspoons brown sugar
2 teaspoons gluten-free curry powder
2 teaspoons gluten-free dry
mustard 4 teaspoons gluten-free vinegar
2 teaspoons gluten-free soy sauce (from health food store)
salt and freshly ground pepper
Directions:
In a frying pan, brown chicken in hot oil. Remove from pan and drain.
Pour oil from pan and add remaining ingredients. Stir until pan drippings are dissolved. Add chicken.
Cook on low heat until tender.
